Description

Hearty italian sausage soup brings warmth and comfort to winter evenings, blending robust flavors with rustic ingredients. Savory sausage, tender vegetables, and rich broth create a satisfying meal that draws diners closer to Italy’s culinary traditions.

Ingredients

Scale

Meat:

  • 1 pound (454 grams) Italian sausage

Vegetables:

  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 medium red bell pepper, chopped

Tomatoes and Broth:

  • 1 (28 ounces/794 grams) can crushed tomatoes
  • 4 cups (946 milliliters) beef broth

Pasta and Seasonings:

  • 1.5 cups (210 grams) rotini pasta
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup fresh basil
  • Salt and pepper to taste

Garnish:

  • Parmesan cheese for serving

Instructions

  1. Brown italian sausage and diced onions in a large pot over medium-high heat until meat is caramelized and onions are translucent, approximately 8 minutes.
  2. Drain excess grease from the meat, then quickly incorporate minced garlic, stirring for 45 seconds to release aromatic flavors.
  3. Pour in crushed tomatoes, chicken broth, red pepper flakes, Italian seasoning, creating a robust liquid base for the soup.
  4. Increase heat to high, bringing the mixture to a vigorous boil, then reduce temperature and add uncooked pasta.
  5. Cover pot and simmer for 12-15 minutes, gently stirring intermittently to prevent pasta from sticking to bottom of pot.
  6. Once pasta reaches al dente consistency, remove from heat and fold in fresh chopped basil leaves.
  7. Taste and adjust seasoning with salt and freshly ground black pepper as needed.
  8. Serve hot, generously garnishing each bowl with freshly grated parmesan cheese for added richness and depth of flavor.

Notes

  • Customize meat by choosing mild or spicy Italian sausage depending on flavor preference.
  • Remove sausage casings before cooking for smoother texture and easier breaking apart.
  • Use whole wheat pasta for added nutrition and heartier consistency.
  • Substitute gluten-free pasta to make recipe celiac-friendly without compromising taste.
