Description

Creamy mashed potatoes with roasted garlic elevate comfort food to a sophisticated side dish. Fragrant roasted garlic infuses rich, smooth potatoes with deep, mellow flavor that delights your palate and complements any main course.

Ingredients

Scale

Main Ingredients:

  • 3 pounds Russet potatoes or Golden Yukon (peeled and quartered)
  • 1.5 cups (360 milliliters) heavy cream
  • 1 cup (100 grams) Parmesan cheese, shredded
  • 4 tablespoons (56 grams) butter, salted

Roasting and Flavoring:

  • 2 heads garlic
  • 4 tablespoons (60 milliliters) olive oil
  • 3 tablespoons (4 grams) fresh thyme

Seasoning:

  • 1/4 teaspoon salt
  • Black pepper, freshly ground

Instructions

  1. Preheat oven to 400°F for roasting garlic.
  2. Trim the top off garlic heads, exposing the cloves inside.
  3. Drizzle exposed garlic cloves with olive oil and wrap completely in aluminum foil.
  4. Roast garlic in the oven for 45 minutes until soft and caramelized.
  5. Allow roasted garlic to cool, then gently squeeze cloves out of their skins.
  6. Combine roasted garlic cloves with olive oil in a small mixing bowl.
  7. Prepare potatoes by peeling and cutting into uniform quarter-sized chunks.
  8. Place potato chunks in a large pot, covering with cold water by 1-2 inches.
  9. Bring potatoes to a rolling boil over high heat, cooking for 15-20 minutes until fork-tender.
  10. Thoroughly drain potatoes, ensuring no excess water remains.
  11. Transfer potatoes to a large mixing bowl and mash until smooth.
  12. Return empty pot to stove, adding heavy cream, mashed potatoes, Parmesan cheese, and butter.
  13. Simmer mixture on low-medium heat for 5 minutes, stirring continuously until cheese melts and ingredients incorporate.
  14. Transfer to serving dish, drizzle with garlic-infused olive oil.
  15. Garnish with fresh thyme, cracked black pepper, and additional salt to taste.

Notes

  • Roast garlic slowly and carefully to prevent burning, ensuring a sweet, mellow flavor that transforms the potatoes.
  • Use starchy potatoes like Russet or Yukon Gold for the creamiest, fluffiest mashed potatoes with the best texture.
  • Allow potatoes to steam dry after draining to help them absorb cream and butter more effectively, creating a richer final dish.
  • For a lighter version, substitute heavy cream with milk or Greek yogurt and use less butter while maintaining the roasted garlic’s intense flavor profile.
